Coco Lopez cake for the win.
I was asked to bring a dessert to our Super Bowl Sunday festivities at my sweet sister-in-laws home. I immediately thought of this cake. It’s really easy to put together and always, ALWAYS a HUGE hit.
Grab a French Vanilla Cake Mix (or white cake mix) and follow the recipe on the back for baking in a 9×13 pan.
One of my mama’s secrets to making a perfectly moist “bought” cake mix is to only use JUMBO eggs. Not large, or medium. I’m telling you it really makes a difference in my cake mixes. That’s my tip for the day by the way.
Now WHIP that baby up. I start my mixer on slow, then medium, then the highest setting for about 2 minutes. Some would say not to whip it on high because it will cause to much air to get in the mix, but I say WHIP IT and WHIP IT GOOD! My cakes always rise soooo high when I use that method. (Another good tip :))
Now grab these two cans of love (Coco Lopez and Sweetened Condensed Milk) and mix them together with 1 teaspoon of Vanilla in a bowl while the cake is cooking at 350 degrees until toothpick comes out clean, which is about 25 minutes.
Next you are going to let the cake cool for about 10 min then poke holes all over the cake. Pour that sweetened condensed milk and Cream of Coconut mixture all over the cake.
Next I refrigerate the cake for at least 2 hours before serving. I typically like to do this cake the day before because it’s supposed to be really cold when you serve it. Plus it give the cake flavor the longer you let it sit in the refrigerator which equals perfection.
Then take the cake out of the refrigerator and spread a medium container of Cool-Whip on top. Now depending on your preference you can leave the cake alone or add sweetened coconut on top. For baby showers or specific holidays I like to tint my coconut with the color I desire which really adds to the festivities!
Since it was the Super Bowl I chose the two colors of the Falcons and Patriots which are Blue and Red. That way no matter what team you are rooting for IT WORKS! lol
See? Just a drop or two of food coloring will do.
So now that my cake is ready I’ll just pop it back into the refrigerator until it’s time to serve it. I can’t stress enough how delicious this cake is.
It’s even better the day AFTER the Super Bowl… just saying.
