In honor of St. Patty’s Day and my Irish ancestors, I made this cute recipe card for my famous (& very easy) MINT BROWNIES. I’ve made these little chocolate perfections for weddings (white frosting), baby showers (blue or pink frosting) and everything in between. Just add the food coloring you want to the mint frosting recipe and it’s a party.
I learned how to make these from my mother-in-law, MaryAnn, (who used to work for a catering business). She had four boys and they ALL love them. When she died of cancer almost 21 years ago I wanted to carry on her Mint Brownie legacy, so I created the recipe above since I never had a chance to get it from her. I’m grateful I can make these and bring back memories for my husband of his wonderful, loving, and dedicated mother.
Everyone thinks this is SO HARD because they taste SO GOOD. I just cheat and use a regular brownie mix. However, I’ve used homemade brownies as well and it taste just as great. YOU CHOOSE. I like the quick method the best for these.
