Lemon Pi(e) 2017

For Pi(e) day I had to make a dessert pie. Since it’s been so cold the last few months and I’ve been craving SPRING and FRESH smelling and tasting things I decided on a LEMON pie with a graham cracker crust.

My mom makes a wicked awesome Lemon Meringue Pie, but I wasn’t willing to put the time into that since I’d been working all day and had only a few hours to spare at home. I needed something quick, delicious and satisfying. This recipe was exactly what I needed.
Grab 1 1/2 c. Graham Cracker Crumbs, 2T Brown Sugar and 6 T Melted Butter. Mix all that together and press into a pie pan. Bake at 350 degrees for 8 minutes. This will set the crust perfectly and prep for the yummy filling.

While that is in a 350 degree oven for 8 minutes let’s make the filling. You’ll need the juice of 3-4 lemons (2/3 c is what is needed), 2 cans of sweetened Condensed Milk, 3 egg yolks, the zest of one of those lemons and a pinch of salt. Use your mixer or hand mixer and beat on low until everything is combined. Then beat on med – high speed for 2 minutes. By this time the crust should be done and ready to fill.

Fill the pie crust with that yummy filling and put it back in the oven for exactly 10 minutes. This will cook that filling (needed due to those eggs) and set everything nicely. Remove from the oven and cool for at least 2 hours before placing in the refrigerator. I like to do this the day before I need the pie so the pie is nice and cold.

Lastly, I whip up some homemade whipping cream or just use the spray can of whipped cream and slice that pie and close my eyes as I take the first bite. I’m really dreaming of summer nights with a cool, light breeze and a hint of my gardenia bush by by porch as I enjoy that bite.

Pi(e) day is complete with this yummy Magnolia Lemon Pie. It just so happens that Fixer Upper is on tonight with a new episode so YAY for me! I’ve seen a lot of people call this “Magnolia Lemon Pie” but I swear it’s my grandma’s recipe so I’m calling it “Grandma Lemon Pie”. It’s really the old standard recipes that are the best. Especially Pie recipes. So, whatever you call it IT’S FABULOUS.
