Mint Brownies

LOVE Mint?  LOVE Brownies?  Well this is an easy way to satisfy both of those cravings!  

Start with a good ole’ brownie mix.  

Then pour that mix in a bowl.  Then add the ingredients listed on the back of the box with the addition of 3T All purpose Flour.  That’s my trick to getting the best, almost homemade Brownie ever. 

Lastly add 3/4 c of chunky chocolate chips or regular chips and stir.  

I use a cool brownie bites pan I found a Williams Sonoma because I love the corners.  It was love at first brownie bite. 

Ready, set, BAKE! Bake in a 350 degree oven until toothpick inserted comes out clean. 

Now whip up a batch of mint icing.  I put 2T softened butter, 3 c Powdered Sugar, 1/2-1t peppermint extract and 3-4T whole milk in a bowl and whip that up.  Add a Little green food coloring (I used the Americolor Mint Green color) for interest.

I love the new Thin MINT Oreos so I just crushed about 10 of those and used that for a quick topping.  

Look how freaking adorable.  Bite into that little piece of heaven.  Close your eyes and dream of the Irish country side, with the wind blowing through your hair. Or sit down with a big glass of milk and watch my all time fav Irish movie…The Quiet Man or Darby O’Gill and the Little People.  Both are my favorite.
