This is a never fail, super easy NO BAKE cheesecake that will melt in your mouth with happiness.
Graham Cracker Crust
8oz Cream Cheese
1/3 c. Lemon Juice
1 can Sweetened Condensed Milk
Let the cream cheese sit out on your counter for at least an hour. Then use a hand mixer to beat that up in a medium sized bowl.
Add the Condensed Milk. Beat until combined and smooth.
Now add the flavoring. Lemon Juice (can use freshly squeezed) and vanilla.
Beat until smooth and everything is combined. Pour mixture into a graham cracker crust. I sometimes use cute little ones if I want to serve them individually or give them away as a treat, but I usually place the mixture in a 9″ ready made shell.

Next you will want to refrigerate for at least 3 hours. I like to make it in the morning and serve it that evening. I’ve even done it the day before to save time. This is a fabulous pie. You can serve it with any fresh fruit topping, pie filling or just whipped cream. The lemony hint just makes this cheesecake divine.
